At the time of writing this book, this cookie really is my favorite cookie. And I wait patiently to see if any will fall victim to breaking on the baking sheet, or when being transferred to a cake stand to sit atop the pastry case—because I crave this cookie. I think about it so often, and this is coming from a person who does not seek out chocolate, nor do I usually want chocolate chips in my cookies. This is one of my “never say never” moments—because this cookie is truly divine.
For the gluten-free flour, I recommend Nu Life Always Gluten Free All-Purpose Flour (270 g) or King Arthur Gluten Free Measure for Measure Flour (240 g).
Because these cookies have a dark chocolate color, it’s easy to overbake them. Don’t wait to take them out of the oven until they look darker, just make sure the center of the cookie looks matte, and the edge of the cookie is firm to the touch.
