“We have 250 or 300 cookbooks that we look at—but I think it was the idea of just understanding a sense of place and so those writers—you know, Paula Wolfert, of course, and Anne Willan—lots of writers who would take you to a place so that you would get a sense of that, and you'd have a broader picture."
